Bún bò Huế literally meaning Huế (central Vietnam) style beef rice vermicelli-vegetarianized!

One of the popular dishes of Vietnam, this dish explodes with flavour and aroma, mostly from the lemongrass in the broth as well as chili pepper and powder. The soup base usually ranges from mildly spicy to not spicy at all. In this vegetarian version, the broth is made from mushrooms instead of beef broth, and is topped with marinated imitation beef slices. The aroma of the lemongrass and the chili is still present and it tastes just like the original dish!

Sorry but I'm not quite sure I can. I don't have the recipe written down and it was my mom who made most of the dish and it was just the spur of the moment kind of thing. There was no measuring and the such so I have no idea where to start. I'm sorry.
