Bún bò Huế literally meaning Huế (central Vietnam) style beef rice vermicelli-vegetarianized! One of the popular dishes of Vietnam, this dish explodes with flavour and aroma, mostly from the lemongrass in the broth as well as chili pepper and powder. The soup base usually ranges from mildly spicy to not spicy at all. In this vegetarian version, the broth is made from mushrooms instead of beef broth, and is topped with marinated imitation beef slices.
